We have recently upgraded our system here at At Home Apartments so that we can better serve our residents. Here are a few tips for residents to ensure that you are using our services to the fullest extent.

Sign up for the tenant portal. This is now the easiest and most efficient way to pay rent. At the tenant portal you can set up re-occurring automatic rental payments. You can also make one time payments and have access to your account 24-7. Call your management office for more details.

When you sign up for the tenant portal, you will have access to our online maintenance request system. This system makes it very easy to make a maintenance request at any time of the day. *Remember to call emergency maintenance during off hours if you need immediate assistance.

Please call your rental office right away if you have not updated your contact information recently. We need your updated information so we can keep you up to date on notices for your building, events in your community etc…

If your friends are looking for a place to call home you can refer them to our website. We now have updated online availability for all of our locations! This makes it very easy to find the perfect building/location that suites your needs.

Spring is the time of year for new beginnings and it is right around the corner! We all love to see the flowers blooming, trees budding, and that first Robin sitting on a branch, but what about all of that dust that has accumulated throughout the winter in our homes? Time for spring cleaning!

Valentines Day is only one day a year, but there are many ways you and your significant other can keep that “Valentines Day feeling” alive year round!

Connect at the Start and End of Each Day

When you wake up in the morning, let them know you’re happy to see them or hear their voice. Before you go to bed, remind them that once more. There’s nothing quite like being reminded how special you are to start and end your day. And it takes just a little bit of awareness to make such a huge difference in someone’s life.

Give Hugs, Kisses and Physical Affection

There is something special about the human touch. We are not talking just in the bedroom either! Again, something that takes very little to make happen but can mean so much to the recipient. A hug or kiss reinforces that physical connection you have with your significant other and it can linger all day long. Whether your partner needs a hug to lift their spirits or just as a gesture of how much you care about them, physical affection is one of the best ways you can make that Valentine’s Day feeling last all year long.

Simple Gestures

Things like writing a love letter on a sticky note in their lunch kit, or sending an email that lets them know you’re thinking of them is a simple gesture that can go a long way. Keep some sticky notes in a kitchen drawer along with pens of different colors so you have them at the ready, and bookmark an e-card service in your Internet browser so that should the moment strike you, you can quickly send off a message to your sweetheart.

Even a phone call during the work day, just to say “Hi” and see how their day is going shows that you care. Sometimes it is the simplest gestures that have the greatest meaning.

Say the Words

Whether those words are “I love you”, “You’re the best” or “I love us”, it really doesn’t matter. Regardless of common belief, women (or men for that matter) are not mind-readers. Even if you know that your significant other loves you, sometimes it is just great to hear them say it. By starting to “ritualize” this sort of vocal expression of love, you’re setting yourself up for a long-lasting habit that will level up your love life and keep the home fires burning throughout the year.

Try New Things

Even the most successful relationships can get routine at times, and there is nothing wrong with this. Human nature likes routine! However, too much routine can lead to boredom. Sometimes people are hesitant on changing their routine/behavior in fear that their significant other may not enjoy this change. For example, calling your significant other at work or sticking a note on their lunch bag may seem “silly” to you, but for all you know they will love this small gesture! You don’t know until you try. If you give it a go and it does not quite work out as planned, try something else. Your significant other will more than likely notice that you are “trying” and appreciated the thoughtfulness. This thoughtfulness may even spark a cycle between the two of you, and your partner may begin to “try new things” with you as well. The point here is this; do not get so stuck in your routine that you forget to “try” in your relationship.

Reflection Leads to Recognition

Reflect and discuss past times, and special moments that you have shared with your loved one. Sometimes we get so wrapped up in our day-to-day lives that we forget the little moments along the journey that brought us together in the first place. Journaling is a great way of documenting these moments. How you feel is an important way to not only express how you feel about someone, but to foster expressing those feelings to them on a daily basis. Capturing your thoughts on paper may remind you that the gratitude really resonates; giving you further fuel to make sure that Valentine’s Day isn’t the only day where you let your loved one know how much they mean to you.

Grand Avenue is amazingly thick with pedestrians and bicyclists alike. Remember it is the law to stop for pedestrians in a crosswalk -- whether it is marked or unmarked. Here are some great things to keep in mind when you are driving, walking or biking!

The Facts About Bike and Pedestrian Safety

Each year in Minnesota, approximately 30 pedestrians and 10 bicyclists are killed as a result of collisions with motor vehicles.

As a group, pedestrians and bicyclists comprise nearly 10 percent of all traffic fatalities each year—71 percent of these fatal crashes occur in urban areas.
30 percent of pedestrians and 8 percent of bicyclists killed had consumed alcohol.
15 percent of pedestrians killed were not crossing properly.

Share the Road with Bicyclists

Bicyclists and motorists are equally responsible for bicycle safety. The number-one factor contributing to bicycle-vehicle collisions is failure to yield the right-of-way — by bicyclists and drivers alike.

About one-half of all bicycle-vehicle collisions are due to a variety of bicyclist behaviors, such as disregarding a traffic sign or signal. The other half are caused by vehicle driver behaviors, such as inattention and distraction.

To be safe, drivers and bicyclists must Share the Road.

Treat Every Corner as a Crosswalk to Keep Pedestrians Safe

Motorists must treat every corner and intersection as a crosswalk, whether it’s marked or unmarked, and drivers must stop for crossing pedestrians — it’s the law.

Minnesota law states pedestrians must obey traffic control devices, and when no traffic control device is present, motorists must stop for crossing pedestrians within a marked crosswalk or at an intersection with no marked crosswalk.

Pedestrian Safety Is Everyone's Responsibility

Failures to yield the right-of-way and driver inattention/distraction are the main contributing factors in pedestrian crashes. Follow these basic safety tips to prevent pedestrian-vehicle crashes.

Tips for Drivers:

Watch for and anticipate pedestrians — especially in urban areas, around schools and colleges.
Drive at safe speeds — pedestrians can be difficult to see, especially in bad weather or at night.
It’s the law to stop for pedestrians in a crosswalk, even if it’s not marked — stop far enough back so drivers in other lanes can also see the pedestrian in time to stop.
Do not block crosswalks while stopped, and don’t pass other vehicles stopped for pedestrians.
When turning, drivers often have to wait for a "gap" in traffic. Be aware that while watching for that gap, pedestrians may have moved into the driver’s intended path.
Be especially attentive around schools and in neighborhoods where children are active.

Tips for Pedestrians:

Don't count on drivers paying attention — make eye contact with motorists. Continue to be alert and check for vehicles when walking in a crosswalk.
Be predictable — cross or enter streets where it’s legal to do so.
Use sidewalks where provided — where no sidewalks are provided, it is usually safer to walk facing traffic.
Make it easy for drivers to see you — dress in light colors and wear retro-reflective material. Carry a flashlight when it’s dark.
Alcohol and drugs can impair your ability to walk safely, just like they do a person's ability to drive.
Use extra caution when crossing multiple-lane, higher speed streets.

How to make “homemade” scented candle… the easy way!

This is a simple and affordable alternative to expensive scented candles.

Go to the grocery store coffee isle, simply dispense a small amount of a scented coffee been such as vanilla or chocolate hazelnut. If you are feeling extra creative, try mixing them!

Then swing by the dollar store to pick up small tea candles and a small bowl (if you don’t already have one) or a charming tea cup. Fill the bowl (or cup) with beans add the candle to the center. As the candle gets warm it releases the aromas from the coffee bean!

Fun Activities for the Minnesota Winter

Looking for some fun things to do in the next few weeks? If you're like me, as the temperature gets a little colder, you may need a little extra motivation to get out of the house and into the chilly Minnesota winter weather. Here are a few ideas:

Hunt for treasure

“Hi-tech orienteering” happens year-round at Lake Waconia Regional Park for geocaching enthusiasts, said parks coordinator Lenny Schmitz. Carver County hosts geocaching because the popular activity is “a great way to get families and kids out in the wilderness to combat modern society’s nature deficit.” Visitors also enjoy spectacular rides on a two-lane, 80-foot sledding hill built specifically for the park.

Glide and slide

Three Rivers Park District offers the perfect retreats for those who can’t live without snow. Both Elm Creek and Hyland Lake Park Reserves provide snowmaking for cross-country and downhill skiing/snowboarding. Elm Creek kicks it up a notch by making snow for sledding/tubing at its new sledding hill, which is complete with lanes, rental tubes and a conveyor-style lift.

Trails at Hyland, Elm Creek, and French regional parks are also a highlight – literally – said associate superintendent Boe Carlson, because the district lights them every evening. “People can still get out and ski or walk after work – even on our short winter days,” he said.

Climb the ice

Are you on the adventuresome side? Ice climbing is allowed at three locations in regional parks in St. Paul: the Lilydale Brickyard, Crosby Park (on Mississippi River Boulevard near I-35E) and at Shadow Falls (at East River Rd. and Summit Ave.). Ice climbing requires an annual permit and approval from the St. Paul Parks Department.

Explore the natural world

Explore winter through the eyes of an animal, search for tracks and play in the snow during the Tamarack Nature Center’s Frogs and Polliwogs winter class series. The Center, located in Ramsey County’s Bald Eagle/Otter Lakes Regional Park, offers a variety of art and nature-oriented classes for all ages. Special family events are held monthly throughout the winter, including the Winter Festival on Feb. 23 and the Sugar on Snow event, for collecting maple syrup, on Mar. 15.

Enjoy the quiet

Snowshoeing is a lovely way to navigate the winter landscape. Miesville Ravine, in Dakota County, boasts a three-mile snowshoe trail that winds through the Cannon River Valley along Trout Brook. The trail is “really beautiful and unique – and Trout is a babbling brook, which enhances the experience,” said Beth Landahl, Dakota County Parks visitor services supervisor.

1. City Parks in Minneapolis

Minneapolis Parks and Recreation designate two sites as official sledding hills.

Columbia Golf Course in Northeast Minneapolis is one of the steepest hills.

Theodore Wirth Park, west of downtown Minneapolis, has a sledding hill with a tow rope.

Matthews Park, Powderhorn Park, Fuller Park, Lyndale Farmstead Recreation Center and Beard's Plaisance are unofficial and perhaps hazardous (trees, lakes, other obstacles) sledding hills. The Minneapolis Parks and Recreation Board recognizes that sledding takes place at these parks, and wants you to know that it is at your own risk.

2. City Parks in St. Paul

Fourteen St. Paul parks have designated sledding hills, some gentle, some steep. The best is the city is Battle Creek park, a steep hill that's lit for sledding until 9 p.m.

3. Minikahda Vista Park, St Louis Park

Minikahda Vista Park has a long, fairly sleep, wide open hill. Elsewhere in St. Louis Park, Oak Hill Park is popular with families. And the city of St. Louis Park has 10 more parks with what it calls "sliding hills".

4. Vadnais-Snail Lakes Regional Park, Vadnais Heights

Vadnais-Snail Lakes Regional Park has a sledding hill, conveniently right by the park's Snail Lake parking lot.

5. Manitou Ridge, White Bear Lake

There are two hills at this golf course, one slower and smooth, the other faster with bumps. From the golf course parking lots, the hills are behind the club house.

As soon as the first flakes of snow fall, most Minnesota kids grab a sled and head for the nearest hill. When the lakes and ponds freeze over even tiny tots don blades and get ready to learn to ice skate.

Many of us joyfully revert to childhood as we loft a snowball at a friend, make an "angel" in the snow, or build a snowperson in the back yard.

Having children and grandchildren gives us even more of an excuse to do what we wanted to do anyway.

First Time Renter?

Renting an apartment can, and should be, a very exciting experience! However, first time renters may not be aware of all the factors to take into consideration when looking for their new apartment.

Below is a list of questions that may be beneficial to ask on your apartment showing, before signing a lease.

§ What is the price of this apartment, and what amenities/utilities are included in that price?
§ How much is the security deposit on this apartment?
§ If electricity is not included, how much on average can I expect my electricity bill to be each month?
§ What is parking like? Do I have to pay for parking? Is there an option to rent a garage?
§ Is there public transportation nearby?
§ What is your pet policy?
§ Do you have any specials/promotional deals going on right now?
§ What are my options for lease length?

Budget Wisely:

Experts advise that you should not spend more than 30% of your income on rent. Make sure that you can afford the apartment that you will be living in. Take into consideration all of your other monthly bills such as cell phone, credit card, internet, cable tv, car loan, groceries and electricity (if not included).

Paying rent in full, and on time, should be a priority. Late rental payments can have an affect on both your credit (if sent to collections) and your future as a renter. Most apartment complexes will do rental history checks on you to see what type of a rental history you have.

Roommates:

Of Beets, Perfume and the Pursuit of Eternal Life...

As an avid reader, I completely fell under the spell of Tom Robbins. If you haven’t heard of him or read any of his books, I highly recommend him. “Jitterbug Perfume” is the latest book that I have read and have now classified this as my favorite novel of all time.

The plot is a slightly complicated to go into detail - suffice it to say that it involves an ancient Bohemian prince, his lover, the god Pan and a mysterious, alluring perfume that many characters in the present are near finding the secret recipe to. To say more about the plot would be a grand disservice to the reader.

This book is to be savored and enjoyed! Not only is his style of writing amazingly different than any other author I have read, he keeps you mesmerized with a broad range of memorable characters. He is poetic, romantic, honest, witty, hilarious and thought-provoking.

Needless to say, he draws you in from page one and keeps you there. Tom Robbins never ceases to amaze me, and keeps me on my toes with every page I read until I reach the end of the book. If you like this book, I advise you to read “Still Life with Woodpecker” and “Half-Asleep in Frog Pajamas”!

Organization 101: Storage Containers that Add to Your Home Décor

Organizing your home or office is an ongoing process, and experts like Steven Covey suggest that you take time at the end of each day to reorganize your desk, making it easy to find things and get to work the next morning. One of the tricks of organizing is putting things where you can find them again, without having them cluttering up the landscape and getting in the way. File cabinets are perfect for organizing papers by date, alphabet or subject because they make paperwork vertical and simple to page through. Transparent boxes can hold craft items, making it easy to find what you want without rummaging around. Closets contain clothes, but bulky things like sweaters might take up less space stored in boxes. Whatever storage options you choose, you're in luck, because modern storage can be pretty and functional. You don't have to buy cheesy cardboard boxes: the new bright acrylics are more durable and much more decorative!

Clearing and Organizing Clutter Make Small Spaces Seem Larger

One mistake many people make is in thinking that cleaning doesn't count unless it's thorough and completely organized. There's a lot to be said for hiding mess until you have time to deal with it: there's no reason to punish yourself by living in clutter until you can clean it all up! It's surprising how much more open a room can look when the horizontal surfaces are cleared off, even temporarily. One solution to cluttered coffee and dining tables is to place baskets under each table, and sweep the clutter into the basket once a day. On the weekend, sort through the basket, discard magazines and junk, put books back in shelves. When Monday rolls around, start over!

Go Vertical with Apartment Storage Solutions

Things look better in stacks. If you don't have time to put things away but still need to make a room presentable, simply stacking books and papers, stacking large to small, from bottom to top, can clear horizontal space fast. Choose narrower bookshelves that reach high up the wall rather than wide ones that spread across the floor to maximize open space. Mount speakers to the wall rather than setting them on the floor. Hang pots and pans, towels and clocks on walls.

Hide Unwanted Clutter in a Blanket Box

One of the best investments you can make is in a blanket box. Larger than the usual cedar chest, a blanket box comes with a lid, making it possible to stash 45 square feet of books, papers, tools, dishes, yes, even blankets in a tidy, contained space about 5 feet long by three feet wide and deep. Make it a rule: when the lid can't be easily closed, it's time to sort and either reorganize or throw things out.

If you have a choice between open and closed shelves or cabinets, choose closed ones. That way you don't have to look at disorganized shelves and neither does anyone else. Keep closet doors shut and put things in drawers as you move through your rooms.

Multi-Task Your Apartment Clutter Clean-up

You can sort through a hatbox of toiletries while watching TV, hang up laundry during commercials, fill or empty the dishwasher when you stand up from the computer to stretch. Accomplishing little bits of housework can feel less onerous when you do it in the middle of doing something else.

Keep at Least one Horizontal Surface Totally Clean

It does a lot for your mental state to rest your eyes on a surface that's completely free and empty. It's always tempting to put art objects or knick-knacks on the mantel, but resist the impulse. Choose one area in each room and keep it totally cleared off. It's sort of an affirmation, a way of saying, "I can do this: I can control my space." An open space rests the mind and stimulates creativity.

Replace "Stuff" (i.e. Clutter or Too Many Decorations) with Plants

Plants are natural air purifiers. They provide visual interest, and add a shot of color and fragrance for a minimal investment of time and effort. Bulbs are great for growing indoors. Many are shade-tolerant, and they come in an endless variety of colors. The other plus side of using bulbs is that you can grow them any time of year. You can force bulbs to bloom out of season by refrigerating them for a couple of months, then bringing them out into the world where they will experience spring, created by you!

There are some easy things you can do in your apartment to help you stay warmer this winter. Here are a few ideas.

Take advantage of free solar heat - keep blinds open in the day to let in sun, close them at night to hold in the heat

Set thermostat at 68 degrees, 2-3 degrees lower if you'll be away from the house for several hours

Close fireplace flue when not in use

Use warm clothes, blankets, etc. to feel warmer

Caulk/weatherstrip around doors and windows. It's inexpensive, and it can significantly reduce drafts and improve comfort

Turn off exhaust fans immediately after use

Use ceiling fans ("backwards") to circulate warm air down from the ceiling

Cooking helps heat your home - but don't use the oven as a primary heat source

And always remember to keep your storm windows closed and make sure your regular windows are closed and latched shut.

A Yummy & Wholesome Breakfast

Ever think that you don’t have enough time for a yummy & wholesome breakfast?

In about a half hour you can have 6 out of your 7 days prepared!

Ingredients

4 large eggs
1/4 cup half-and-half
1/2 teaspoon salt
Assorted mix-ins (such as shredded cheese, diced vegetables, and cooked and chopped bacon, ham, or sausage)
Grated Parmesan cheese (optional)

Instructions

Heat your oven to 350º F and coat a 6-cup muffin pan with nonstick cooking spray.
Whisk together the eggs, half-and-half, and salt in a medium bowl, then evenly distribute the egg mixture among the muffin cups.
Add about 2 tablespoons of mix-ins to each cup, then sprinkle on a bit of Parmesan cheese, if you like.
Bake the frittatas until they are puffy and the edges are golden brown, about 20 to 25 minutes. (If necessary, run a butter knife around the edge of each one to loosen them before removing them from the pan.) Makes 6 mini frittatas.

Prepare them on when you have some downtime, put them in the fridge, and pop them in the microwave before work!

Holiday Ettiquette: 10 Tips

1. If you are invited to a holiday gathering, do not leave the host or hostess hanging. It is rude not to RSVP, or to RSVP late.

2. Know your host/hostess. If you are invited to a gathering that has a specific start time, make sure to show up on time. Typically people who include a start/end time have those times on there for a reason. Nothing more awkward than arriving when everyone has already been seated for a meal.

3. If you are planning to bring a “Plus One” to an event that you only received one invitation for, do not bring a guest without first asking the host/hostess if this is okay.

4. If you receive a gift that you absolutely hate (like the ugliest sweater you have ever seen) make sure to hide your dissatisfaction. Smile and find one good thing to say about it J

5. Don’t forget to tip those who regularly serve you. It is customary in our country to thank these people with a gift or tip. Who might you tip?- housekeeper, letter carrier, teacher, babysitter, dog-walker, etc.

6. Considering re-gifting that ugly sweater? Make sure not to re-gift something that you have received if you might hurt someone’s feelings, especially if this gift was made specifically for you. If you choose to re-gift, make sure the person you are giving it to will appreciate the gift (not that you are just pawning it off). Consider donating to charity instead of re-gifting.

7. If you are planning to write a holiday newsletter, you do not want to come across as a braggart. Refrain from going into every little detail about every moment of your past year. Focus on the highlights. Keep the letter under a page, and try not to brag too terribly much. That being said, do not be a “Debbie Downer” either. Focus on keeping the letter concise, upbeat and as relevant as possible.

8. Common rule of thumb is that it is better to be over than underdressed for an occasion. DO NOT show up underdressed. This is just rude. Check with the host/hostess if you are not sure what the dress code will be.

9. If you are attending a holiday party, do not criticize the host/hostess or anything they have prepared. For example, if you show up expecting a 3 course meal only to find snacks, do not tell the host/hostess that they should have cooked more (common sense, I know, but you would be surprised the clever ways people find to hint about their dissatisfaction). Chances are that the host/hostess has gone through a lot of trouble to prepare for their guests and they will not appreciate being told that what they did was not good enough for your expectations.

10. Oh, and do not forget to thank people for gifts/cards/hosting parties. Everyone likes to feel appreciated J

This is what seafood looks like in the New Year!

New Year’s Eve reminds me of my childhood and growing up with my very German family. Every New Year’s Eve, my parents and I made extravagant meals always involving some sort of seafood. Rumor has it that it started with my great-grandma during the Great Depression when getting canned sardines was an easy find during rough times and eating soup and bread every day would get old.

She would whip the sardines into some sort of dip and make potato “chips”. Eventually the sardines were replaced with [canned] shrimp once the Depression dwindled.

This year, I found this amazing recipe that I am going to use…and I cannot wait until the 31st to make it!

Bacon-Wrapped Scallops

12 pieces bacon

24 large scallops, rinsed and patted dry

1 teaspoon Old Bay Seasoning, to taste

1 teaspoon Creole seasoning, to taste

1 cup ketchup

1/3 cup packed light brown sugar

1/2 cup white vinegar
Directions

Preheat oven to 425 degrees. If you prefer, the bacon can be pre-cooked for a couple of minutes in the microwave to insure it will be crispy by the time the scallops are done. Be careful to not overcook the scallops as they will be rubbery.

Cut each piece of bacon in half to make 24 pieces, roll a piece of bacon around each scallop and secure on wooden skewers. Place scallops on a rimmed baking sheet and sprinkle with Old Bay and Creole seasoning. (Both seasonings contain salt, so don't overdo it!)

Bake at 425 degrees for 15-18 minutes or until the scallops are done and the bacon is crispy. While the scallops are cooking, combine the ketchup, brown sugar and vinegar in a saucepan to make the dipping sauce.

Mix well and cook until the sugar is dissolved.

Tired of the same old sugar cookies and gingersnaps? I ventured out and found these exciting, new recipes sure to please any holiday guest. They are perfect for your holiday parties or even on Santas cookie plate! Enjoy!

Jellied Champagne Dessert Recipe

Ingredients

1 tablespoon unflavored gelatin

2 cups cold white grape juice, divided

2 tablespoons sugar

2 cups Champagne or club soda

8 fresh strawberries, hulled

Directions

In a small saucepan, sprinkle gelatin over 1 cup cold grape juice; let stand for 1 minute. Heat over low heat, stirring until gelatin is completely dissolved. Stir in sugar. Remove from the heat; stir in remaining grape juice. Cool to room temperature.

Transfer gelatin mixture to a large bowl. Slowly stir in Champagne. Pour half of the mixture into eight Champagne or parfait glasses. Add one strawberry to each glass. Chill glasses and remaining gelatin mixture until almost set, about 1 hour.

Place the reserved gelatin mixture in a blender; cover and process until foamy. Pour into glasses. Chill for 3 hours or until set. Yield: 8 servings.

Almond Crunch Recipe

Ingredients

4 to 6 unsalted saltine matzo crackers

1 cup butter, cubed

1 cup packed brown sugar

3/4 cup semisweet chocolate chips

1 teaspoon shortening

1 cup slivered almonds, toasted

Directions

Line a 15-in. x 10-in. x 1-in. baking pan with foil; line the foil with parchment paper. Arrange crackers in pan; set aside.

In a large heavy saucepan over medium heat, melt butter. Stir in brown sugar. Bring to a boil; cook and stir for 3-4 minutes or until sugar is dissolved. Spread evenly over crackers.

Bake at 350° for 15-17 minutes (cover loosely with foil if top browns too quickly). Cool on a wire rack for 5 minutes. Meanwhile, melt chocolate chips and shortening; stir until smooth. Stir in almonds; spread over top. Cool for 1 hour.

Break into pieces. Cover and refrigerate for at least 2 hours or until set. Store in an airtight container. Yield: 1 pound.

Caramel Fudge Brownies Recipe

Ingredients

4 ounces unsweetened chocolate, chopped

3 egg whites, lightly beaten

1 cup sugar

2 jars (2-1/2 ounces each) prune baby food

1 teaspoon Spice Islands® pure vanilla extract

1/2 cup all-purpose flour

1/2 teaspoon salt

1/4 cup chopped walnuts

6 tablespoons fat-free caramel ice cream topping

9 tablespoons reduced fat-whipped topping

Directions

In a microwave, melt chocolate; stir until smooth. Cool slightly. In a large bowl, beat eggs whites and sugar. Stir in prunes, vanilla and chocolate mixture. Combine flour and salt; gradually add to chocolate mixture just until moistened.

Pour into an 8-in. square baking pan coated with cooking spray. Sprinkle with walnuts. Bake at 350° for 30-32 minutes or until the top springs back when lightly touched.

Cool on a wire rack. Cut into squares; drizzle with caramel topping and dollop with whipped topping. Yield: 9 servings.

Warm Up with this Winter Soup!

Minnesota offers a wide variety of outdoor activities all year around. Even when the weather gets wet and cold you can still enjoy the outdoors. Some of my favorite things to do this time of year are hunting and fishing. Pheasant hunting is an especially fun activity. If you happen to come home with some birds, here is a great recipe for a warming winter soup.

7 c. pheasant stock

1 c. wild rice, rinsed

1/2 c. diced onion

1/2 c. diced carrots

1/2 c. celery

2 strips smoked bacon, diced

4 tbsp. unsalted butter

1/2 c. sliced mushrooms

1 1/2 c. heavy cream

2 tbsp. flour

Curb holiday spending without putting a crimp in your fun!

There’s no easier way to blow the budget than showering all your favorite people with gifts and good food at the holidays. With a little planning, however, you can get more for your holiday dollar. Read on for our ways to curb holiday spending without putting a crimp in your fun.

Create a budget
Before you gear up for the holidays, take a stab at setting how much you have to spend by creating a holiday budget. If you already keep a monthly budget, you’ll easily see what’s at the disposal of your discretionary funds. If you’re super-organized, you may have been contributing to a holiday fund all year long (highly recommended), so you’ll be ready for the season.

Try to come up with a dollar amount per gift and for your holiday meals, both out on the town and at home. Then, you can plan the best ways to get what you want for less.

Make your gifts
We know that the people in our lives would be delighted with hand-made gifts, but it’s not always easy to find the time, let alone the ideas. Perhaps you have a natural talent, such as baking, beading, writing or making music. From Christmas cookies to a special story or recording, a gift that only you could give will be a certain favorite.

Secret Santa
One enjoyable way to cut your gift budget is to organize your family, friends and office-mates into Secret Santa pools where each person draws a name out of a hat and purchases a gift for just that person. With a present swap, gift-giving is made easier — and your holiday budget will stretch much further.

A fun variation is to have everyone bring a gift under a certain dollar amount to a party, number each gift, and then have each person draw a number. Once the first gift has been unwrapped, the next person up can choose either to draw a new gift or to take a gift that’s been unwrapped, causing the previous recipient to draw again. The results can be hilarious as gifts continue to swap hands!

Shop smart, shop early
It’s a good idea to do your holiday shopping throughout the year, taking advantage of sales as you find them. With the availability of discount retail stores and online buying, you can likely find good prices on most any goods and services out there.

Consider writing your list of next year’s possible gifts as soon as the holidays end, so that you have some ideas in mind as you shop throughout the year. Try shops like Tuesday Morning, Homegoods and Overstock. If you follow a site like Groupon, Scoutmob or Save More you can take advantage of their daily offers for all kinds good gift items, including restaurant and spa coupons.

Go potluck
For cocktail parties or holiday feasts that you host, don’t feel the need to bear the burden of providing everything. Potlucks not only save the host money, but make everyone feel involved in providing the libations and tasty edibles. Guests end up with more variety and get to share their favorite dish or drink. When you send out your invitations this year, you might request and provide a way for guests to indicate what they are bringing.

There really are ways to curb holiday spending without having to sacrifice the richness of the season. Start planning early, be inventive and involve your family and friends in sharing ways to give without going broke. Then plan to enjoy the happiest holiday ever!

From Thanksgiving through New Year’s Eve everyone’s calendar is inundated with holiday parties and for the budget conscious fashionista the best way to shine on without breaking the bank is to have a pre-party, party! Here’s how it’s done- Invite a few of your closest fashion forward friends to a “clothing swap”. Essentially, each fashionista invited needs to bring a few (3-5) statement making garments their willing to part with for a period of time in order to trade amongst friends. Once everyone has arrived and laid out their selected contributions, people can begin picking out their desired party apparel. The best part of hosting a clothing swap is that you’re merely putting your fabulous, already worn clothing on loan to your entrusted cohort who will excitedly revive it (the whole ‘rags to riches’ theory applies to this event). Another terrific aspect of this fashion loaning party is that it has to happen again in order to make your seasonal returns. This is a great rationale/foundation to get the girls together again and schedule a clothing swap for the next party season!

***You may want to devise a subtle disclaimer outlining, “You break, you buy!” This clause insures that if any damages are endured while wearing a loaned garment the person borrowing must reimburse or re-purchase (if possible).

One (obvious) rule of thumb when dressing to impress during the holidays is to gravitate towards SEQUINS! Sequin dresses, tops, sweaters, pants, embellishments, etc... Wearing clothes with a lot or a little sequins is a sure fire way to make a statement without a tremendous effort and can be worn for any occasion on your social calendar (work events, family parties, or NYE soirees).

Winter in Uptown….Dazzling!

Winter in Minnesota is always cold, snowy, and at times downright brutal. But all that seems to fade when visiting Uptown. It’s hard to be Scrooge when you can walk along Lyndale Avenue, Christmas lights twinkling in the boulevard trees, people bustling along with packages in hand, and the warm glow of lights emanating from the plethora of restaurants that line this thoroughfare through South Minneapolis.

Some of my favorite places are the Lyndale Tap House, where a bowl of smoked haddock chowder will warm even the coldest of toes! Spinach & Brie Topped Artichoke Hearts…Mmm, the Perfect Holiday Dish!

Want an easy and delightful recipe that is sure to “wow” your guests?? Well look no further…this spectacular Hors D’oeuvre is not only delicious, but it’s a healthy alternative to the much-loved dip!

Ingredients:

1 box(es) (9-ounce) frozen artichoke hearts

2/3 cup(s) cooked chopped spinach

1 teaspoon(s) lemon pepper

1/4 teaspoon(s) salt

18 slice(s) (thin) brie

Directions:

1. Preheat broiler. Prepare artichoke hearts according to package directions.

2. Combine spinach, lemon pepper, and salt in a small bowl. Top each artichoke heart with the spinach mixture and brie. Broil until cheese melts, 1 to 2 minutes.

The state of Minnesota is a physically fit state according to Men’s Health magazine that ranks Minnesota in its top fittest states almost every year! What better way to serve our residents than to bring the workout to them.

At Home Apartments is doing just that. In fact, Yoga being added to the monthly calendar at Chasewood Gates is the 3rd fitness class At Home has added to its amenities offered to residents. The two prior classes that our residents have enjoyed were Core and Aqua Fitness.

The Core and Aqua Fitness classes are sponsored by Tiger Athletics; offering superior training and group fitness classes. The Yoga instructor is none other than the Assistant Manager at Chasewood Gates, Allie Bruber.

A GREAT WINTER RECIPE (wine braised boneless short ribs)

4 boneless beef short ribs
1/4 cup flour
2 tablespoons canola oil
1 large onion
1 celery rib
1 large carrot
3 garlic cloves
1 cup wine
1 -2 cup chicken stock
2 tablespoons tomato paste
1 bay leaf
1 teaspoon dried thyme
1 teaspoon dried rosemary
salt and pepper

Directions:

Preheat oven to 350°F.

Chop onion, celery and carrot into one inch pieces. Mince garlic. Set aside. Dredge beef in flour seasoned with salt and pepper. Shake off extra flour.

Heat dutch oven or other oven/stovetop safe deep pan over high heat till hot. Add oil and immediately add beef.

Brown beef till all sides are dark golden brown. Remove from pan and add onion, carrot and celery.

Reduce heat to medium and add garlic. Sauté till vegetables start to brown.

Add wine and reduce by half.

Add tomato paste, chicken stock, thyme, rosemary and bay leaf.

Return beef to pan, cover tightly and place in oven. Cook for about two hours or until beef is tender but not falling apart.

Remove beef and strain vegetables off of sauce. Return liquid to pan and reduce until desired consistency.

Season sauce to taste. Serve over spatzle, noodles or polenta.
